Distillation is the main method by which essential oils are extracted from plants. It involves heating the plant material, so that steam passes up through it which causes the walls of the specialized plant cells in which the plant essence is stored, to break down and release the essence in a vapor form. The byproducts of a distillation process are called a hydrosol (scented water) and the essential oils extracted from the plants.
